Only a few minutes' walk from Sydney's Circular Quay and city centre, the Establishment is the first hotel owned and designed by the Hemmes family, which made its name with fashion boutiques but is now better known for its upmarket restaurants and bars. The site was a hot spot even before the hotel opened in November 2000, serving as headquarters of the iconic publication The Bulletin in the 1930s. In its latest incarnation, it hosts one of the city's coolest bars, the Establishment Bar, the cutting-edge Tank Bar and sumptuous, modern Hemmesphere bar. The Establishment's flagship restaurant, est, is also very good. The 35 luxurious rooms are generously proportioned and guests can choose from two different décor schemes: the Classic, which features bleached American white oak and ivory linen, and the City, which has dark Japanese timber floorboards and ash-coloured woollen throws. It is a very grown-up space, ideal for that weekend away (sans kids).
