TV chef Rosemary Shrager presides over Amhuinnsuidhe. Her larger-than-life personality has virtually taken over and her week-long cookery courses are proving a huge success. The castle also takes in hunting and fishing guests, as well as running painting and music courses. Harris is a stunning island, with custard-yellow beaches and the whole place is a wildlife paradise, with an abundance of seabirds and sea life including minke whales. COST
Cookery courses cost from £975 per person (for a maximum of 12 people) for five nights, including instruction, accommodation, meals and wine. Prices on request for individual stays.
