The ineffably elegant Spring Moon is a celebrated Cantonese restaurant in the venerable Peninsula Hotel. In its teahouse atmosphere, dim-sum master Yip Wing Wah has been transforming flour and water into delicate little dumplings for the past 18 years. Every day, Chef Yip and his team of five turn out between 10,000 and 12,000 individual dim-sum items, including his legendary pork-filled pumpkin dumplings, light, stamed prk buns, translucent steamed chicken dumplings with white brassica and crisp golden spring-onion puffs wih minced ham. If you really like them, you can even learn to make them, as Chef Yip conducts regular dim-sum classes for Peninsula guests.
