Owner Costis Psychas' almost 40-year-old hotel was built on traditional village homes in the perivolas (garden) area of Oia village, where islanders made Santorini's famous sweet white wine before production was mechanised. Today's 17 very individual houses avoid modern fripperies such as TVs and DVDs and pitches itself as a place for mental detox. All are light, roomy and extremely comfortable, with small balconies or patios, and the staff can advise on excursions, walks and visits to the satellite islands in the 15km-wide crater. Don't miss Akrotiri, one of the major archaeological sites in the Cyclades, or the hair-raising Teleferic cable car from the capital, Fira, down into the volcano. Or stay at the hotel, more precisely in the pool, where you will feel as though you are floating 500ft above the glinting blue Aegean Sea.
