Any house that runs cookery classes, as this one does in high season, will have a superb kitchen and access to the best local produce. Morels and asparagus grow in the area, and there are plenty of wild boar (for someone else to hunt). In addition, the market town of Brignoles is 15km away, a one-stop shop for everything you will need for a week's inspired cooking. But it gets better: Château Routas is on a 110-acre vineyard that offers tours, tastings and direct sales. In high season, there is also a resident chef, Frances Wilson (once executive chef at Lalime's in San Francisco). The grand terracotta house has seven bedrooms, five bathrooms and a long dining terrace overlooking the vineyards. There is also a four-bedroom farmhouse decorated in a colourful, relaxed style and 640 acres of woodland to explore.
