Carmona is a very beautiful town with a lovely market square filled with food stalls, restaurants and cafés. This restaurant has tables in the middle of the square and serves perfect food such as al boronias, a Moorish ratatouille of aubergines with toasted pine nuts on top, and spinach with garlic and walnuts. We love sitting in the

AFFORDABLE - CASA BALBINO, CADIZ, SPAIN
Sanlúcar in Cadiz is one of the best places in the world to eat seafood. People pour onto the street from this small tapas bar, which has a lively, crammed feel, and stand talking and drinking. The tortillitas de camarones are great: thin, crispy pancakes made from chickpea-flour batter into which are stirred tiny, live, jumping prawns, no larger than a

SMART - EL REY DE COPAS CARRETERA DE FRAILE, JAEN, SPAIN
Chef Juan Martias puts his own accent on Moorish food here; he does a fantastic salt-cod salad with orange, served with almond and dried fig cake, a version of Moroccan pastilla, and deep-fried aubergine with caña de miel. We discovered Jaén recently; it's in a fairly hidden part of Andalucía. The smart restaurant is in a lovely, light room. It's totally Spanish and there's a bar at the front where the locals hang out.
