The fact that Elliot
Ketley has come to the
St Moritz after four
years as head chef of Soho
House New York is indicative
of the calibre of this venture
from Virgin Atlantic chief
executive Steve Ridgway and
his brother Hugh. The British
chefs superb, uncomplicated
food and restaurant an
open-plan deli stocked with
fresh fi sh, vegetables and
goodies from The Cornish
Chilli Company is the warm
heart of this Art Deco-inspired
hotel. And Ketley is not the
only asset. The new-build is in a
prime spot above Daymer Bay
between the sailing haven of Rock and surfers paradise of
Polzeath. The 63 apartments,
suites and rooms, which can be
bought (from £645,000 to £1.6
million) as well as rented, have
been furnished by Falmouthbased
Absolute Design in
smart Hamptons-meets-Miami
style (oak floors, tongue-and-groove
walls, wallpapers and
bed runners in shimmery blues
and greens). Half have sleek,
ocean-going balconies with
views over the swimming pool
to the Camel Estuary. There's
