In the morning, guests practice yoga on the roof of this imposing hilltop fort; at sunset they gather for cocktails among the white-and-butterscotch-coloured onion-dome turrets, then stay for a rooftop dinner as locals perform folk dances. The 60 rooms are reminiscent of decadent days before the Raj. Our favourites are 201 and 206, for the light through their stained-glass windows.
